Easter’s calling

As we inch closer to the start of spring (and we’re definitely looking forward to reclaiming lighter evenings at the end of the month!), Easter’s beckoning along with the first asparagus…

Although spring lamb is often the traditional choice for an Easter Sunday menu, turkey is another fantastic family favourite and we have a small number of Godwick turkeys available. Sustainably farmed in small numbers, these birds offer high quality meat and an incredible flavour that is hard to beat. There are limited numbers, so get in quick if you’d like one!

Of course before we get to April, there’s St David’s Day on 1 March, Mother’s Day on 11 March and St Patrick’s Day on 17 March – whichever you choose to celebrate, roast lamb does indeed take some beating. Accompanied by peas, mint and lettuce, roast loin pan-fried and roasted for just ten minutes is a great, quick dish. Try it with a couple of rashers of streaky bacon, fried with diced onion and then simmered in 500ml of lamb stock. Add some peas, a knob of butter, lettuce and the mint for a few minutes, before serving the lamb, sliced on top.
