Water buffalo à go-go

As we prepare to move into early summer, it’s time to enjoy all that the season has to offer. Fresh produce comes into its own and this is perfect when accompanied by some fantastic cuts of meat on a barbeque, or pan-fried for a quick supper.

One addition that has proved enormously popular with our customers is water buffalo, which we farm on the Sandringham Estate, just along the road form our Dersingham village store. We took on a herd last year and it’s been a real pleasure to see these magnificent animals mature over the following months. Food miles are a subject that’s been in the news in recent times, and knowing that the meat you buy and eat is farmed within a few miles of your butcher is as reassuring as the quality and fantastic flavour of this lean, tasty meat.

Of course we’ve been testing a range of recipes and, along with a delicious buffalo steak pie and grilled fillet, we’ve enjoyed buffalo burgers and even an adventurous buffalo redang curry.

If you’re tempted by this, it’s an easy recipe to try –  simply blitz a red onion, two garlic cloves, a tablespoon of ginger along with two (three if you like it hot!) chillis and a stalk of chopped lemongrass in a food processor.

Heat a tablespoon of oil in a saucepan over a medium heat, before adding the paste along with a tablespoon of ground cumin, ground coriander and a teaspoon of turmeric and gently cook for two minutes.

Add a kilo of diced buffalo steak and sear for two minutes before adding a 400ml tin of coconut milk and a teaspoon of tamarind paste and brown sugar. Then simmer this fragrant mixture for two hours, stirring occasionally, before serving with rice and – to keep it homegrown – perhaps some local asparagus.
